OUR STORY
The idea and inspiration of Hapapino came about from Kimo (Hapa) & Mark’s (‘Pino) childhoods eating breakfast in humble Hawaiian and Filipino-American households…Meat.Rice.Egg. Whatever was left over in the fridge, throw it on rice and put an egg on it!
In 2020 (in the middle of the pandemic), with no formal training in cooking or food service, they bought a food cart and worked to bring the concept and vision to life. They started perfecting our recipes, tested them with their friends, and did popup events at Room 122 Taphouse in Beaverton…thats when they knew we had something special. Along with popups, they catered evnts (parties, weddings, work events etc). They then moved their cart to a permanent (somewhat permanent) location at the Food Cart Pod at Washington Square. The were there for 6 months then it was shutdown by the landlord. They then searched all over Washington County for a new location. While driving through Beaverton they spotted Dynamic (17300 Baseline Rd, Beaverton, OR) and saw that there was big parking and it was constantly empty, so they cold called them and said they could setup shop there. The cart has now been there serving the community since September 2022. It’s been a labor of love, with ups an down, but they are continuing to learn more about how to run a successful food service business.

First generation born in the United States of Filipino immigrants, Filipino food culture has always been a big part of Mark’s life. Mark grew up eating all the good delicious, gout-inducting filipino foods his parents cooked and were available at Filipino parties hahah. From adobo, pancit, kare-kare, sinigang, & dinuguan, amongst all the others…there was nothing he wouldn’t try as a kid. He never had aspiration of working in food service, but loved the food culture. Mark’s background is in marketing having worked in marketing at Nike for 13+ years and leading the marketing organization at Dutch Bros Coffee for two years. Having started and ran 4 different businesses post corporate life, Hapapino has fulfilled his passion for food and serving people…the filipino love language.
Born and raised in Oregon, Mark lives in Beaverton with his wife Janet, sons Cooper & Cassius, and dogs Queso and June. Along with being co-owner of Hapapino, he owns Meddy Marketing a marketing consulting business which helps businesses (small and large) in marketing strategy, brand activations, content & social media, and culture building.
